Lapsang Souchong
A speciality of the Fujian province, Souchong refers to the type of tea bush that grows in the Wuyi mountains. The leaves are withered over pine or cypress wood fires and then pan fried and rolled, next they are pressed into wooden barrels, covered with cloths and left to oxidize. Finally they are hung in baskets over smoking pine wood fires to dry. The result is an intensely black leaf that when brewed gives a dark red liquor that has a distinctive smoky aroma and flavour
