Pai Mu Tan
From the province of Fujian, Pai Mu Tan is a white tea which is quickly growing in popularity all over the world. After the tea leaves are picked, the tea is dried in the sun or in closed rooms without any technical aid. The resulting brew has a shimmering amber tone, a refreshing aroma and a delicately spicy taste. This tea comes from the delicate buds and younger leaves of the Chinese Camellia Sinensis (the Chinese tea bush). These buds and leaves are allowed to wither in natural sunlight before they are lightly processed to prevent oxidation or further tea processing. This preserves the characteristic flavour of the white tea. 1 teaspoon of tea per cup, after boiling, cool the water to 80 degrees prior to adding the leaves so as not to burn them, steep for 2-3 minutes and then strain, enjoyed without milk this makes a smooth, sweet and mild flavoured brew with a hint of nuttiness.
